In the stripped-down interiors at the Brooklyn restaurant Isa, there is a hint of the menu to come.
Septime - Everything, but especially Beets with charred baby leeks and grated foie gras and their Orange Sorbet with blood orange, crumble and curd.
L’Avant Comptoir - Scallops in bouillon with cocoa nibs, Scallop tartare, Boudin macaron with piment d’espelette jelly.
Frenchie Wine Bar - Too many as it has literally become my canteen, but mostly Burrata with Boudin Noir and Apple Chutney, Casseron coleslaw, Smoked mackerel with cauliflower, Matteo’s Panna Cotta with butternut.
Au Passage - Magret de canard, Duck heart and liver, Scallops with blette.
Aux Deux Amis - Horse tartare on one occasion, then devouring most of the menu in one hungry sitting on another …
Verjus Wine Bar - Succulent crunchy fried chicken, Celery root dumplings, Skillet broccoli with rice cake and anchovy.
Le Verre Vole - Anything containing offal.
Quedubon - Artichokes and foie gras, their medley of lamb insides.
